Jeoncha

Jungjak (증작/中雀/) is a grade of Korean green tea. Jungjak is the third pluck of the harvesting season. The harvesting period for jungjak begins on May 20th or soman (소만/小滿), following the traditional East Asian seasonal cycle. Jungjak is called "medium sparrow" or "medium sparrow's beak" referring to the size of the leaves.

Jungjak tea leaves are dark green and have a wiry and wavy appearance when dried. The tea's liquor color may be light green to pale yellow while the taste is said to be smooth and feature umami and vegetal hints, flavors, and notes.
