The term fermentation is used in biology to describe the conversion of organic matter by bacteria, fungus, or other biological cell cultures. For producing pu-erh fermentation is used to make the tea ripe. For the production of oolong and black tea is only oxidation (formerly often wrongly called fermentation) used.
